About the Role

The Sous Chef will play a critical leadership role in the kitchen, working closely with the Executive Chef/Partner to ensure flawless food execution and operational excellence. This hands-on position will help oversee all culinary functions, support team development, and maintain the brand’s high standards of quality, consistency, and presentation. Ideal candidates will have a strong foundation in Italian cuisine, with specific expertise in pasta and sauce work.

Key Responsibilities

  • Supervise daily BOH operations and ensure consistent, high-quality execution across all stations.
  • Assist in training, mentoring, and motivating kitchen staff in a collaborative, positive environment.
  • Maintain consistency in pasta preparation, sauces, and composed dishes aligned with brand standards.
  • Oversee inventory, prep, ordering, and cost controls in coordination with the Executive Chef.
  • Ensure all safety, sanitation, and health standards are met in compliance with regulations.
  • Support new opening setup, including kitchen organization, systems, and team onboarding.
  • Foster a culture of teamwork, professionalism, and pride within the kitchen.
  • Collaborate with FOH leadership to ensure smooth communication and service flow.

Qualifications

  • 3–5 years of experience in upscale or fine dining kitchens.
  • Strong background in Italian cuisine; handmade pasta experience required.
  • Proven ability to lead, train, and inspire BOH teams.
  • Excellent organizational and communication skills.
  • High attention to detail with a commitment to quality and consistency.
  • Experience with new openings or expansion projects a plus.
  • Flexible availability including evenings, weekends, and holidays.
  • Willingness to travel for short training period in New York prior to Miami opening.
